Testimony

I found out today that I may be a witness in a court case. It all stems from a deposition I gave six years ago against a former employer.

I can’t really write about the details yet.

In other news, I’m off work tomorrow. I have a floating holiday (MLK) that I hadn’t used yet, and I’ve been really wiped out lately. So tomorrow, I shall stay at home and sleep.

Think I like JetBlue?

These are all of my travel plans for the next few months… and they’re all on the same airline—JetBlue.

I just booked a trip home the weekend before Easter for Reggie and I. Yup, the little jet-set Pug is going to visit Mimi and Pappy for Easter.

For the pre-Easter trip, get this… My airfare was $128. Reggie’s airfare was $100. That cracks me up.

Oh, I did have to blank out my confirmation numbers so that nobody could mess with my seats or anything like that.

Cauliflour soup

I was planning to make some more soup this week, and tonight I took a stab at it.

Frequently I use broccoli. This time, I decided to use cauliflower. And I usually start with a base of bacon fat. This time I used butter.

First, I sauted the onions and celery in two tablespoons of butter, salt, and pepper. Then I added a bit of flour and some tomato paste to help thicken the soup. Next came the cauliflower florets.  As the mixture got thicker, I added a little bit of chicken stock at a time. After it came to a simmer, I added more tomato paste. Once the cauliflour was the right consistency, I added some light cream and the velveeta cheese. Yes, I said velveeta. It melts perfectly and is great for soups.

Let me just say that this soup was outstanding. It was seasoned perfectly and it had a really good depth of flavor.

Oral Surgery

I went through the oral surgery today. The whole ordeal probably took less than 30 minutes.

They extracted the existing tooth and then did the implant. It will take the implant six months or so to grow into the bone, but the hard part is done.

The worst part was when they had to suture my gums back together. That kind of sucked. Now I have to go back in a week

I’m still pretty tender and they have me on some decent pain killers. It might just be a good excuse to take tomorrow off work.

New Laptop

I got a new laptop at work today. It’s a Lenovo (IBM) ThinkPad T60 with a dual core. It’s got a gig of RAM and a nice, big keyboard.

My X41 has been acting funny the past month or so. After replacing the hard drive two weeks ago, the drive started going bad again last week.

This one is nice and big compared to the X41. It’s got a bigger screen and a bigger keyboard. It’s also much heavier. That’s not necessarily good.

We’re sending the X41 back to Lenovo while it’s still under warranty. The question is whether or not I want the X41 back when it comes back.

Good Ice Cream

Dinner this week

I have my meals for the week ready to go. In addition to the soup I made and the soup Beth made, I have three chicken dishes ready to cook.

First, I have lemon mustard chicken. Second is the lime cilantro chicken. Third is the lemon parsley chicken. These three chicken dishes are sitting in their respective marinades soaking up the flavor. By using the fresh herbs, citrus fruit, and mustard, the chicken breast tenders are just drinking up the flavors. How can this be bad? Mother history has taught me to make sure that the citrus juices are paired with olive oil to make sure the acid doesn’t cook the chicken in the fridge.

I still have some veggies in the fridge to make broccoli cheese soup or cauliflower cheese soup.

Anyway… I’m certainly not going to starve this week.

Snow, Pugs, and Soup

Yesterday, I drove out to Beth and Paul’s house to pick up Reggie. My intent was to go out, help Beth cook some food, and then head home with my pooch. It didn’t work out that way.

First, they got WAY more snow than we did. When I got there, Beth had just come home from the grocery store and was going to be doing a massive amount of cooking, and we started having a few cocktails and making soup.  And soup we made. Beth made enough soup to feed a small army. Her tomato basil soup was to die for. In fact, I brought some home with me.

Now I’m home making my own soup. On the stove right now is a beef vegetable lentil soup. It’s going to be quite good. Next will be some cauliflour cheese.

Today is the superbowl on TV. It’s more like a souperbowl in my life. Seriously, IF I watch the game, it’ll be for the commercials. But seriously, there has to be something better on TV. I’ll be cracking open a bottle of sparkling wine that I’ve had in the fridge. Tomorrow will be a long day at work. I need to be there WAY early.

Taxes

I just filed my taxes. Using TurboTax Online, it took me about 20 minutes.

I’m getting about $1100 back from the federal government and about $375 from the Commonwealth of Massachusetts.

I can live with this.

I still read the Rocket online. That’s the paper from Slippery Rock University, my alma mater.

It’s not very often that the Online Rocket publishes breaking news. Today was an exception.
